Santoku es la barra japonesa más de moda en Madrid. Todo el mundo quiere ir a disfrutar de su exclusivo menú. Hasta tal punto llega su éxito que está completo hasta final de año, pero tiene lista de espera. Y os digo una cosa: la espera merece la pena porque vais a gozar como nunca.
Para nosotros Santoku se ha convertido en el restaurante del año. Su concepto de una mesa, 8 comensales y un chef es fantástico. Delante de nuestros ojos prepararon un menú omakase de seis platos donde la anguila y el hígado de pato son protagonistas. Cada bocado es irresistible y cada plato una gozada para los cinco sentidos.
Detrás de este pequeño restaurante de El Retiro está el venezolano Gabriel Suárez. Apasionado y autodidacta, Gabriel jamás prueba sus creaciones porque curiosamente es vegetariano. Se deja guiar por su intuición y por la expresión de los rostros de sus comensales. Y os puedo asegurar que las caras de placer dicen mucho cuando pruebas el temaki de atún o la gyoza de cocido.
Sobresalientes y originales también las otras propuestas del menú de Santoku como el Maki de anguila con hígado de pato, el Bao al vapor con tartar de salmón o su Domburi con anguila y foie gras, que está para repetir una y otra vez.
Para terminar, no esperes un postre, sino un original nigiri de salmón con fresa que por arte de magia se convierte en boca en un dulce final feliz. En definitiva, que la experiencia de comer en Santoku es inolvidable. Y más aún por solo 35 euros por persona, con la bebida incluida, lo que lo convierte en una propuesta única e irresistible al alcance de todos los bolsillos.
